
I wanted to share my go-to salad because whenever I post, I get a lot of messages asking what I like to make. It changes every time depending on what we have in our fridge and pantry, but here’s what I put together!
4-6 Servings
Ingredients
- 2 cups of greens- kale, spinach, romaine or arugula
- 1/2 cup purple cabbage (optional)
- 1/4 cup sliced purple onion (optional)
- 1/2 cup nuts (I like almonds, peacans, walnuts- it’s whatever we have)
- 1/4 cup dried cranberries
- 1/4 cup fruit or vegetables (I love apples, but you can add strawberries, oranges, peppers, or tomatoes. Depending on what’s in season or when you’re serving the salad.)
- 1 can of Garbonzo beans
- Your favorite seasoning (I like paprika, oregano, turmeric, Herbes de Provence, salt + pepper)
- Dressing of your choice
Instructions
- Wash and dry your lettuce (this is good to do ahead of time for meal prep)
- Add in your toppings of choice
- I like to chop my salad with kitchen shears
- Toss in your rinsed Garbonzo beans
- If you’d like, rinse and toss your garbonzo beans with seasoning. I like paprika, garlic, and salt with some olive oil. Air fry or toast then in the oven for 10-15 minutes)
