Ingredients:

  • 1.5 tbsp avocado oil
  • 1.5 leeks, sliced (white and light green parts)
  • 3 cups broccoli florets
  • 3 cups baby spinach
  • 2 zucchinis, diced
  • 6 cups low-sodium vegetable broth
  • 3/4 cup fresh parsley
  • 1/2 tsp spirulina powder
  • Juice of 1 lemon
  • Rosemary
  • Pink Himalayan salt and pepper to taste

Instructions:

  1. Heat avocado oil in a pot. Sauté leeks for 3 minutes. Add broccoli, spinach, and zucchini.
  2. Pour in vegetable broth and simmer for 15 minutes.
  3. Blend the soup until creamy. Stir in spirulina and lemon juice. Adjust with salt and pepper.
  4. Garnished with parsley and enjoy!
