Our daughter Colette loves these little Blondies as a treat. We made them on a playdate, and they’ve been a regular recipe in our house. Enjoy!

Ingredients:
- ⅓ cup butter
- 1/2 cup pure maple syrup
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 cup coconut flour (coconut flour does crumble, so you can also make these with all purpose flour. We don’t mind them crumbly)
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- ⅓ cup white chocolate chips
Instructions:
1. Preheat oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
2. Mix wet ingredients: In a large bowl, whisk together the melted butter, maple syrup, eggs, and vanilla until smooth.
3. Add dry ingredients: Stir in coconut flour, baking soda, and sea salt until fully combined. The batter will be thick.
4. Fold in white chocolate chips.
5. Bake: Spread the batter evenly in the prepared baking dish. Bake for 18-22 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
6. Cool and slice: Allow to cool completely before slicing into squares.
