You’re going to love this easy flavorful dish packed with protein and fresh veggies!


3-4 Servings:

Ingredients:

  • 1 lb chicken breast, sliced into strips
  • 3 medium zucchinis, spiralized into noodles (you can also buy pre-spiraled zoodles)
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 tbsp coconut aminos
  • 1 tbsp avocado oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp sesame oil
  • 2 tbsp sesame seeds or cashews for garnish

Instructions:

  1. Heat avocado oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove and set aside.
  2. In the same skillet, sauté garlic and ginger for 1 minute. Add broccoli, bell pepper, and carrot. Stir-fry for 5 minutes.
  3. Add zucchini noodles, coconut aminos, and sesame oil. Stir-fry for 3 minutes.
  4. Return chicken to the skillet and toss to combine. Cook for 2 more minutes.
  5. Garnish with sesame seeds or cashews before serving.
