Brian loves a wrap, so I experimented and made him this for lunch. It combines the classic flavors of Caesar salad with a spice for added flavor and heat.

Ingredients:
For the Wraps:

  • 2 whole-grain or sprouted grain wraps
  • 1 grilled chicken breast (about 6 ounces), sliced
  • 2 cups romaine lettuce, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup organic croutons (optional, for crunch)

Ingredients:

For the Dressing: (makes enough to save- store in the fridge)

  • 2 tbsp Calabrian chili paste (or 2 small Calabrian chilis, finely minced)
  • 1 clove garlic, finely grated or minced
  • 2 anchovy fillets (or 1 tsp anchovy paste, optional for a vegan version)
  • 1 tbsp Dijon mustard
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Worcestershire sauce
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp grated Parmesan cheese (or nutritional yeast for a vegan option)
  • 2 tbsp Greek yogurt
  • Salt and pepper to taste

Directions:

  1. Prepare the Dressing:
    • Prep the Base: In a medium bowl, whisk together the Calabrian chili paste, garlic, anchovies (if using), Dijon mustard, lemon juice, and Worcestershire sauce until smooth. Slowly whisk in the Greek yogurt or tahini until fully incorporated.
    • Emulsify: Gradually drizzle in the olive oil while whisking continuously to create a creamy, emulsified texture.
    • Stir in Parmesan cheese (or nutritional yeast), then season with salt and pepper to taste.
    • Store: Store in an airtight container in the fridge for up to 5 days.
  2. Assemble the Wraps:
    • Lay each wrap flat and spread a thin layer of the spicy Caesar dressing.
    • Layer the chopped romaine lettuce, sliced chicken, Parmesan cheese, and croutons (if using) in the center of each wrap.
  3. Wrap and Serve:
    • Fold the sides of the wrap inward and roll tightly from the bottom up. Slice in half diagonally for easy handling.
    • Serve immediately or wrap in parchment paper for on-the-go convenience.
